
This hearty soup can be prepared in a slow cooker in ~15 min, for a healthy and tasty meal that is ready when you are. Recipe courtesy of Emily Mutter.
- 1 large head of cauliflower, chopped
- 2 potatoes, chopped
- 1 onion, diced
- 1L low sodium vegetable stock
- 1-2 tbsp curry powder
- 1 tsp garlic powder
- ½ can light coconut milk
- Salt and pepper to taste
Directions:
- Add all ingredients, except coconut milk, to a slow cooker or large pot and cook until done. Add coconut milk and blend until smooth in a food processor.
