Zesty Quinoa Salad
Quinoa is a South American grain that is exceptionally high in protein and fibre. It resembles couscous in appearance and can be used in any recipe that calls for rice. Be sure to rinse quinoa well before cooking.

  1. Bring quinoa, water, and bouillon to a boil. Reduce heat and simmer until liquid is absorbed, about 20 minutes.
  2. Add remaining ingredients and toss. May be served warm or cold.
