Salmon Quiche
This quick and easy salmon quiche is packed full with protein and healthy fats. Plus, by making the crust from brown rice instead of the traditional high fat pastry, you save calories and increase fiber. Serve with a salad and you have a filling meal that will leave you satisfied for hours.

  1. Stir together rice and 1 whisked egg. Press firmly over bottom and sides of 8x8x2 inch baking pan, coated with cooking spray.
  2. Spray non-stick frying pan with cooking spray. Add vegetables and cook until soft, about 4 minutes.
  3. Whisk together remaining eggs, milk, salt and pepper in large bowl. Add cooked vegetables and salmon. Spread in rice crust. Top with feta.
  4. Bake in 375° oven for about 30 minutes, until a knife inserted in center comes out clean.
