Landmark research out of Harvard University highlights a surprising risk: individuals who follow gluten-free diets unnecessarily may face a higher risk of developing Type 2 diabetes. Why? Because many processed gluten-free alternative products are significantly lower in dietary fiber, vitamins, and minerals than their whole-grain, gluten-containing counterparts, which help support healthy digestion.
