This recipe was modified from a Paula Deen creation. I modified it to make it more child-friendly, while still being a delicious way to get your veggies in.
Ingredients
- 2 cups cauliflower grated
- 1 egg beaten
- 1.5 cup partly skimmed mozzarella shredded
- 2 tbsp Parmesan cheese
- 1/4 cup pizza sauce
- .5 cup mushrooms sliced
- .5 cup green peppers sliced
- .5 cup chicken breast cooked and diced (optional)

Instructions
- Grate cauliflower. Place in large bowl and microwave for 5-7 minutes until it's soft. Mix in egg and 1 cup of the mozzarella and all the parmesan cheese.
- Pat into greased pizza pan bake for 15 min at 425 degrees.
- Turn oven down to 400. Add sauce and remaining toppings and cheese and bake until cheese is bubbly and slightly browned, approx 20 minutes.
