Cauliflower Crust Pizza

This recipe was modified from a Paula Deen creation. I modified it to make it more child-friendly, while still being a delicious way to get your veggies in.

Ingredients
  • 2 cups cauliflower grated
  • 1 egg beaten
  • 1.5 cup partly skimmed mozzarella shredded
  • 2 tbsp Parmesan cheese
  • 1/4 cup pizza sauce
  • .5 cup mushrooms sliced
  • .5 cup green peppers sliced
  • .5 cup chicken breast cooked and diced (optional)

Instructions
  1. Grate cauliflower. Place in large bowl and microwave for 5-7 minutes until it's soft. Mix in egg and 1 cup of the mozzarella and all the parmesan cheese.
  2. Pat into greased pizza pan bake for 15 min at 425 degrees.
  3. Turn oven down to 400. Add sauce and remaining toppings and cheese and bake until cheese is bubbly and slightly browned, approx 20 minutes.
