I created this meatball recipe for Udi’s Gluten-Free to be served on a hoagie. But obviously, it can be served on noodles, wraps, or pizza crust.
Ingredients
- 1 pound ground turkey
- 1 cup quinoa cooked
- 2 eggs beaten
- 1/2 cup mushrooms finely diced
- 1 tbsp worchester sauce
- 1 tsp garlic powder
- 1/2 tsp organo
- 1/2 tsp basil
- 2 cups tomato sauce

- Preheat oven to 350 degrees. Line baking sheet with parchment paper.
- In a bowl, combine all ingredients except tomato sauce. Roll into 1 inch balls and flatten. Use a small cookie cutter to shape meat mixture into a fun design. Place on baking sheet and cook for approximately 30 minutes or until meat is cooked through. Top with sauce.
