Ingredients
- 3 chicken breasts cooked
- 2 cups brown rice noodles cooked
- 1 head romaine lettuce chopped
- 1 cup carrots shredded
- 2 cups cabbage shredded
- 1 sweet red pepper sliced
- 1 small red onion diced
- 1/2 cup almonds slivered
- 1/4 cup sesame oil
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- 1 tbsp brown sugar
- 1 tsp ginger minced

Instructions
- In a large salad bowl, combine the cooked noodles, carrots, coleslaw, pepper and onion. Pour dressing over salad. Stir until well-coated and let sit for 10 min.
- Slice the chicken into strips and mix into salad. Serve over a bed of romaine lettuce. Garnish with slivered almonds.
