Ingredients
  • 3 eggs
  • 1/3 cup milk dairy, soy or almond
  • 1 tsp vanilla
  • 4 slices bread whole grain
  • 2 cups fruit fresh or frozen, chopped
  • 2 cups yogurt
  • 1 tsp cinnamon
  • 4 tbsp syrup maple or agave
  • 2 tbsp hemp seeds

Instructions
  1. Whisk together the eggs, milk and vanilla. Dip each slice of bread into the egg mixture until well coated. If you're using frozen fruit, heat over medium low heat until thawed.
  2. Spray non-stick frying pan with cooking spray. Over medium heat, cook each slice of bread until golden brown on both sides.
  3. Garnish each slice of bread with ½ cup of fruit and ½ cup of yogurt. Sprinkle with cinnamon, maple syrup and hemp seeds.
