Ingredients
- 3 cups brown rice cooked
- 6 eggs
- 1/2 cup onion
- 1/2 cup celery
- 1/2 cup mushrooms
- 1/2 cup sweet red peppers
- 2/3 cup milk dairy, soy or almond
- salt and pepper to taste
- 1 can salmon drained
- 2 tbsp light feta cheese

Instructions
- Stir together rice and 1 whisked egg. Press firmly over bottom and sides of 8x8x2 inch baking pan, coated with cooking spray.
- Spray non-stick frying pan with cooking spray. Add vegetables and cook until soft, about 4 minutes.
- Whisk together remaining eggs, milk, salt and pepper in large bowl. Add cooked vegetables and salmon. Spread in rice crust. Top with feta.
- Bake in 375° oven for about 30 minutes, until a knife inserted in center comes out clean.
